This is a delicious way to enjoy desert and get a serving of fruit in your system. Plus you can find local and organic fruits to make this extra eco-friendly. So yummy!
Filling Ingredients:
3 organic apples (Fuji works well, but you can substitute), peeled & cored, sliced into 1/4 inch thick slices.
1 1/2 cups blackberries (can be frozen or fresh where available)
1/4 cup organic unbleached sugar
1/2 cup + 2 tablespoons all-purpose whole wheat flour
Topping Ingredients:
1/3 cup organic rolled oats
1/3 cup whole almonds & pecans, chopped coarsely
3 tablespoons organic brown sugar
1/2 teaspoon cinnamon
3 tablespoons butter, softened (try Horizon brand)
*Oven Preheated to: 350 degrees
*Oil an 8x8 inch glass baking dish.
*In a large bowl put in the sliced apples, thawed (or fresh) blackberries, sugar and 2 tablespoons of whole wheat flour (the rest is for later)
*Scrape the contents (filling) into the baking dish
*In another bowl, toss the oats with the rest of the whole wheat flour, chopped nuts, brown sugar and cinnamon
*Sprinkle the topping you've just mixed together over the filling in the baking dish
*BAKE FOR 35 MINUTES until the filling is bubbling and the top has browned.
*Let cool for 10 minutes
(This dish can be made up to 4 hours before serving, so great!)
Serve alone or as Kevin loves, with a scoop of Ben & Jerry's Organic Vanilla Ice Cream!!
